It has a delicate flavor and a beautiful color. When preparing the fish, it is thoroughly salted, then coated in flavorings and left in a cool place under a weight. This method of preparation originates from Scandinavia. The gravlax available at Raczka is produced locally by a Polish-Finnish team near Warsaw.
