The Jabłońskis are specialists in all things green – from spring to autumn, they offer organic lettuce and herbs in various flavours and colours at BioBazar, as well as edible flowers and, in summer, delicious, sun-kissed tomatoes. The Bukiet Smaków farm is located in Rozalin near Warsaw, and its owner, Mr Maciej, knows more about greens than most. The differences in taste between the various species are not subtle at all. Some varieties of lettuce are perfect for salads, others are suitable for grilling, and lettuce can also be used to make Podhale salad soup, Mexican cream soup or green borscht. Mizuna and pak choi go well with the taste of long-cooked umami broths. Mustard greens are a great substitute for mustard. Radicchio and radichetta can be baked, following the Italian example. Blanched Swiss chard is heaven in your mouth! Lettuce has many uses. Herbs are also a vast topic, and when buying at Bukiet Smaków, you can always count on good advice and interesting anecdotes.
