Mr. Witold’s farm is located in Grójec, far from the giant apple orchards surrounding the town. As Mr. Witold says, no chemical sprays reach them there. He has had organic certification for four years, although even before that, for 34 years, nothing was sprayed or fertilized with synthetic agents here. Eko Sad Broda is a small, 1.5-hectare farm where old varieties of apples are grown: Klos, Antonówka, Szara Reneta, and Bojkena – the trees there were bearing fruit over a hundred years ago. These are apples that smell wonderful, and the juice from them is incredible! Mr. Broda offers juice from the Klos variety – very acidic and extremely aromatic, juice from Szara Reneta, also quite sour, apple with mint from his own garden, sweet pear with apple, and pear with apple and mint. The juices are sold in three-liter cartons. Mr. Witold is known for his outstanding marinades and pickled cucumbers, and you can also buy dried fruit and dried tomatoes from his own farm. The preserves are made according to traditional home recipes, and the August raspberry juice is made, just like at Grandma’s, in a large jar on the window sill, with a small amount of sugar added. Mr. Witold also offers delicious currants and cherries – the latter are also sold in the form of his own marinade – totally delicious, sweet and spicy. Interestingly, he himself likes to eat these cherries as an addition to smoked trout. Something wonderful! If you are looking for authentic flavors from the old days, you will find them here.
